game day chips n cheese


I don't know about you, but we've been watching tons of football lately. 
Might as well turn it into a party-- 
And no party is complete without a ridiculous amount of cheese.


makes enough to feed an army

1 16oz. box of Velveeta cheese (choose your flavor)
1 can of Rotel diced tomatoes & green chilies
1 lb. lean ground turkey
1 pkg. fajita seasoning (choose your spicy-ness)
lots of tortilla chips

Begin by browning the ground turkey and mixing in the fajita seasoning according to it's packaging directions. You'll want to make sure to pour out any of the excess grease in the turkey pan. The less fat you add to the dip, the better (and more waistline friendly). Set the meat aside once browned and seasoned.

In a large saucepan, melt the Velveeta cheese on medium-low heat. Occasionally stir the cheese with a wooden spoon to ensure nothing burns. The cheese will slowly begin to liquify. This is when you pour in the can of diced tomatoes & green chilies.

Keep stirring with the wooden spoon until the cheese mixture begins to come together in the form of your delicious dip. This will take ~10 minutes. When the dip reaches your desired dip consistency, stir in the browned & seasoned ground turkey.  You'll want to continue to let this warm for a couple more minutes. 

When ready to serve, pour the dip into a large bowl. Make sure you've got plenty of tortilla chips to pass around. This dip will be a party pleaser.  

You can also make this dip using a crockpot.  I recommend setting the dip on low and letting time take it's course. (Sometimes the higher crockpot settings can cause the dip to burn.) This is also a great way to keep the dip warm throughout the entire game.  

Leftovers? Not a problem. Store your extra dip in a airtight container, and pop it in the microwave for future devouring. 


You can garnish your dip with fresh diced tomatoes, 
a bit of sour cream, or a dollop of guacamole to make things festive & fancy.
