Lemon Poppy Seed Muffins in 30 Minutes

I recently whipped up a batch of lemon poppy seed muffins. They were fluffy, flavorful and filled my kitchen with the sweetest citrus meets almond-y aroma. And, the light glaze with bits of lemon zest . . . game, set, match. These muffins are the perfect sweet treat that can easily double as your 3PM snack. Your brunch guests are bound to love you.

I’m wondering if I could sub the Greek yogurt for coconut milk yogurt to make these dairy free? It’s a more runny consistency.
Great question! I just did a quick Google search, and it looks like you can substitute one for the other. The consistency and possibly the flavor of the muffins may end up a little bit different, however. Good luck + happy baking!
